Wheat/Dairy-Free Eggplant Tofu Stir-fry


I love eggplant, I love tofu and I love black beans. In fact, Eggplant & Tofu in Black Bean sauce is one of my favorite dishes in Chinese and Thai restaurants.

Try this delicious and easy recipe.

3 small eggplants, sliced and quartered
1 15 oz. can of black beans (or 2 c organic black beans, soaked and cooked)
1 small onion, chopped
1 t Himalayan sea salt
2 T olive oil
1 15 oz. package of firm tofu, chopped
1 T Chinese five-spice seasoning
1 T wheat-free soy sauce

Saute eggplant, black beans, onions and salt in olive oil until golden brown. In a separate pan, fry tofu until crispy brown with Chinese five-spice and soy sauce. Combine the two and enjoy!

Hi Heather! Love your approach to food. I am what you would call 'low-sugar' too. I noticed that you call agave a low sugar food while I think of it as 'sugar-free' - or at least refined sugar free. Can you tell me your reasoning? I know that there is a form of sugar in agave, as there is a form of sugar in fruit. The impact white sugar has on my body is totally different, though. I'd love to hear your thoughts.

Great question!
I started the blog as low sugar because at that time I was using raw sugar or Splenda for baking and cooking.

As I've grown on my food journey, I'm attempting to use less processed forms of sweeteners. I think of agave as a non-refined sweetener and therefore think of it as "low sugar" because it has a relatively low impact on the glycemic index.

Not sure if that makes sense, but that's where I'm coming from.

And yes, I totally notice a difference in my body when I have something like maple syrup (feel it immediately) compared to when I have agave (no effect). I try never to eat white sugar.

Wonderful looking recipe. Eggplant is definitely one of my favorites, I love including it in any stir fry. Thanks!

Hi Heather,

I too love everything you have in your recipe, but my problem is I'm trying to do the "Eat Right 4 Your Blood Type" Diet and sadly, no eggplant for me. :-( Is there another veggie that will work and taste as good?
