Wheat-Free, Dairy-Free, Low Sugar Zucchini Bread
I love baking this bread for get together's with friends. It also goes fabulously well with hot tea. Enjoy!2.5 c quinoa
1 1/3 c no sugar applesauce
1/2 c Smart Balance butter
1 c Splenda
3 cage-free eggs
3 small zucchini, grated
2t baking soda
1/2 t vanilla extract
1/2 t salt
1 T cinnamon
Preheat oven to 350F. Cream butter and sugar. Beat eggs in, one at a time. Stir in applesauce, zucchini and vanilla. In separate bowl, stir in remaining dry ingredients. Add dry mixture to wet, and stir until completely combined. Bake at 350 for 50-60 minutes. Cool for 10 minutes.

What's up with the controversy over Splenda? I've read it is linked to traces of chlorine. I've just recently started my Wheat Free, Dairy Free, Low Sugar diet and I'm so glad I've found this Blog! I'm looking forward to more recipes.
