Spelt Chocolate Chip Cookies

Make your chocolate chip cookies a healthy treat with the following substitutions:

-Substitute whole grain spelt flour in place of traditional flour.
-Substitute raw sugar or Splenda in place of sugar.
-Substitute organic brown sugar.
-Replace butter/margarine with Smart Balance or I Can't Believe It's Not Butter Light.
-Add 1/4c soy protein powder (and remove 1/4c of spelt flour).
-Add organic dark chocolate chips.

*As a side bonus, dunk warm cookies in vanilla soy milk. LOVE it! :)

Then, you can feel good about eating chocolate chip cookies (I know - I ate a dozen of these cookies over the weekend - yum!).
