Chocolate Mousse Pie
The holidays are officially over.
Which means, sometime next week - in the midst of the first full week back to work - you're going to feel a bit empty inside.
No parties or wine or rich food.
And that's why you need to make this chocolate mousse pie. It's healthy, delicious, and above all - it will make you feel better.
Try it out - I just made it for a dinner party and everyone LOVED it.
-9" spelt pie crust - Wholly Wholesome makes a good one
-1 16oz. package of NaSoya Silken Tofu (drained)
-2 t vanilla extract
-8 oz. semi-sweet chocolate
-4 oz. unsweetened chocolate
-Cool-Whip sugar free whipped topping
Bake pie crust at 400 degrees for 7 minutes. Microwave chocolate until melted (approx. 3 minutes). Puree tofu, then add melted chocolate. Puree until completely mixed. Add vanilla extract. Blend well. Once pie crust is cooled, pour mixture into crust. Chill 1 hour, then serve with cool-whip.
